Ingredients

2tbsp rapeseed oil

6 large onions, thinly sliced

2 cloves garlic, crushed

20g parsley, finely chopped

1tsp thyme

1tsp sugar

440ml Guinness

1 vegetable stock cube

6 slices soda bread

50g 30% less fat mature cheese, grated

Sprigs of thyme, to garnish

Method

Heat the oil in a large pan, add the onions, garlic, parsley, thyme and sugar, and stir to combine. Cover and leave to sweat over a low heat for 20-30 mins, stirring occasionally, until the onions have softened and turned golden brown.

Pour the Guinness into the pan and simmer for 5 mins. Add the stock cube and 300ml boiling water. Increase the heat and simmer for 20 mins, uncovered.

Meanwhile, preheat the grill to high and lightly toast the soda bread. Sprinkle with the cheese and grill for 2-3 mins until the cheese is bubbling.

Divide the soup between 6 bowls and serve with a crouton on top of each. Garnish with thyme and black pepper.
