Ingredients
1 Onion, finely sliced
2 Garlic cloves, finely chopped
1 Courgette, finely sliced
1 Red pepper, finely sliced
1 Green pepper, finely sliced
280g Carrots, finely sliced
250g Mushrooms, washed & quartered
2 tsp Cooking oil
2 Blue Dragon Hoisin & Garlic Stri Fry Sauce
200g Blue Dragon Wholewheat Noodles
Method
1Heat a wok or large frying pan over a high heat and add the 2 tablespoons of oil.
2Add the finely sliced onion and chopped garlic and stir-fry for 1 minute, the reduce the heat and add the finely sliced courgettes, carrots, peppers and mushrooms and continue to stir-fry for a further 2-4 minutes.
3Add the sachets of Blue Dragon hoisin & garlic sauce along with a tablespoon of water, cook over a high heat for a further 2 minutes or until all the vegetables are cooked but not too soft. Season to taste.
4Cook the noodles as per pack instructions.
5To serve, toss the cooked noodles into the stir-fry vegetables, coating the noodles evenly.
