Ingredients
1 tsp olive oil
1 Pack Extra Special Mixed Mushrooms
300g pasta
100g cashews
2 tbsp nutritional yeast
1 tsp miso paste
1 tsp dried sage
1/4 tsp garlic granules
150ml plant based milk
Method
1Add the olive oil to a non-stick frying pan, then stir in the mushrooms and fry on a medium heat for 5-6 mins.
2Meanwhile, put the pasta into a pan of boiling water and cook according to pack instructions, until al dente.
3Add the cashews, nutritional yeast, 1tsp water, miso paste, sage, garlic granules and milk to a blender. Add freshly ground pepper to taste and blend into a smooth sauce.
4Pour the sauce into the pan with the mushrooms, simmer for a few mins to allow the sauce to thicken.
5Finally, drain the pasta, add it to the pan and mix to coat with the sauce. Cook over a low heat until heated through, then serve immediately.
