Ingredients
4 Butcher’s Selection Chicken Breasts
2 vine-ripened tomatoes, halved and thinly sliced
2 x 125g packs Asda Light Mozzarella, thinly sliced
20 basil leaves
1tbsp olive oil
3tbsp Asda Green Pesto
Garlic bread, to serve
Rocket, to serve
Method
1Cut widthways slashes into the chicken breasts 2cm apart, going two-thirds of the way through, and put on a baking tray. Preheat the oven to 200C/180C Fan/Gas 6.
2Add a slice of tomato, a slice of mozzarella and a basil leaf to each cut.
3Mix together the olive oil and the pesto, then drizzle over the chicken breasts. Bake for 30-35 mins. Serve with garlic bread and rocket.
