Ingredients
3 tbsp Cook! By ASDA Harissa Paste
250g Natural Yogurt
4 skinless Chicken Breasts, diced
1 Butternut Squash, peeled and diced
2 Red Onions, cut into wedges
2 Red Peppers, deseeded and cut into 1 inch chunks
2 tbsp Vegetable Oil
Pinch of fresh Parsley, chopped
Method
1Preheat the oven to 200°C.
2In a large bowl, mix 2 tbsp of the Harissa paste with 3 tbsp of yoghurt. Add the chicken breasts and set aside to marinate.
3Toss the chopped squash, onion and pepper in the remaining harissa paste and vegetable oil. Add the mixture to a large roasting tin.
4Place the vegetables in the oven. Roast for 25 minutes.
5Remove the vegetables from the oven and add the chicken to the tin. Roast for a further 10-15 until the vegetables and chicken are cooked through.
6Serve with the remaining yoghurt on top, garnished with a pinch of chopped fresh parsley.
