Ingredients

225g Halloumi cheese

2 Yellow peppers

12 Grower’s Selection vine ripened cherry tomatoes?

1 Courgette

1 Red onion

2 tsp Za'atar

1/2 lemon

1 Clove garlic

Put 225g Halloumi Cheese, cubed, 2 yellow peppers, cut into squares, 12 Grower’s Selection Vine Ripened Cherry Tomatoes, 1 courgette, peeled into ribbons, and 1 red onion, cut into slices, in a bowl.

Add 1 tbsp olive oil, 2 tsp Za’atar, plus the juice of half a lemon and 1 crushed garlic clove.Toss together to coat, then thread onto six bamboo skewers (pre-soaked in water to avoid burning on the barbecue).

Cook for 5-10 mins on the barbecue, turning halfway through, until the veg is cooked and the cheese starts to char.

Serve immediately with a tahini yoghurt sauce, plus lemon wedges and flatbreads, if you like.
