Ingredients

2 Asda Ready to Eat Tropical & Sweet Large Mangoes

225g Asda 30% Less Fat Halloumi

1 tsp Vegetable Oil

2 tbsp Sweet Chilli Sauce

3 tbsp Asda Lighter Mayonnaise

4 Wholemeal Pittas

60g Salad Leaves such as Watercress

3 Radishes, thinly sliced

1 tbsp Red Jalapenos or Chillies (optional)

Method

Stone and peel the mangoes. Slice into thin slices approx. 1cm thick. Slice the halloumi widthways to give you 10–12 slices. Brush with the oil.

Cook the halloumi and mango slices on the BBQ over a medium heat for 6–8 mins, turning from time to time, until both are lightly charred and softened.

Mix together the sweet chilli sauce and the mayo to make a drizzle.

Sprinkle the pittas with a little water and add to the BBQ for the last min of the halloumi and mango cooking, turning after 30 secs.

To serve, carefully open the pittas and fill with salad leaves. Then add the grilled halloumi and mango. Scatter over the radishes and chilli (if using). Drizzle with the mayo sauce before serving.

To cook indoors: Cook the halloumi and mango in a large non-stick pan or on a pre-heated griddle pan, over a medium heat for 8–10 mins, turning from time to time. Steam the pittas in the microwave for a few seconds.
