Ingredients
FOR THE EGGS:
20g spinach
10g flat-leaf parsley
10g fresh coriander
3 medium eggs
1 spring onion, chopped
2tbsp olive oil
FOR THE SALSA:
2 cloves garlic, crushed
1 red chilli, chopped
2 tomatoes, chopped
5g fresh dill, chopped
Juice ½ lemon
2tbsp olive oil
Method
1Put all of the ingredients for the eggs into a blender and blitz until mixed together and frothy.
2Pour into a small, nonstick frying pan and cook over a low heat for 2-3 mins or until almost set. Cover the pan and cook for 6-7 mins.
3Meanwhile, stir together the ingredients for the salsa.
4To serve, carefully lift the omelette onto a plate and top with the salsa.
