Ingredients
250g couscous
250ml boiling-hot vegetable stock
80ml extra virgin olive oil
Finely grated zest and juice of 3 unwaxed lemons
3 tbsp capers in brine, drained
8 large mint leaves, finely shredded
50g flaked almonds
20 cherry tomatoes, quartered
6 chargrilled artichokes in oil, drained and quartered
Method
1Place the couscous in a large heatproof bowl and pour over the boiling stock. Cover tightly with cling film and let it rest for 5 minutes. Use a fork to fluff up the couscous and separate the grains.
2Pour half the oil into a medium frying pan and place over a medium heat. Add the lemon zest, capers, mint and almonds. Cook for 3 minutes, then leave it all to cool to room temperature.
3Add the cooled contents of the frying pan to the bowl of couscous with the rest of the oil, the lemon juice, tomatoes and artichokes.
4Toss everything together gently, then serve.
