Ingredients
3 250g Milk choc chip cookie dough
900ml Really creamy vanilla ice cream
50g Dark chocolate
Method
1Preheat oven to 180C/160C Fan/Gas 4. Take half of the cookie dough, break into chunks and press into the base of a 22cm round tin greased using sunflower oil. Bake for 16-20 mins, until lightly golden. Cool in the tin for 10 mins, then transfer the dough to a wire rack to cool completely. Repeat with remaining half of the dough.
2To assemble, let the ice cream soften at room temperature for 5 mins. Line the base and sides of the same baking tin with baking parchment. Put a cookie in the base (top down). Spoon over the ice cream in an even layer (making sure it touches the lined sides). Sit the second cookie on top, pressing down lightly.
3Cover the tin with clingfilm and freeze again for at least 8 hours or until needed.
4Remove the dessert from the tin. Roll the sides of the sandwich in grated chocolate. Serve in wedges with strawberries, if you like.
