Ingredients
1tsp rapeseed oil
100g frozen Scratch Cook Sliced Onions
100g Asda frozen Whole Leaf Spinach
500ml skimmed milk
300g Asda Cook from Frozen Fish Pie Mix
65g plain flour
1tsp ground nutmeg
400g Frozen for Freshness Peas
400g Asda Frozen Mashed Potato
Zest 1 lemon
Method
1Preheat the oven to 200C/180C Fan/Gas 6.
2Heat the oil over a medium heat and fry the onions for 5 mins until soft. Add the spinach and cook for 10 mins. Drain off any excess liquid.
3Meanwhile, bring the milk to the boil in a pan, reduce to a simmer and poach the fish for 12 mins until it starts to flake. Remove with a slotted spoon and set aside.
4Whisk the flour and nutmeg into the milk. Increase the heat, stirring the sauce continuously until it thickens.
5Fold the fish, onions and spinach through the sauce and transfer to an ovenproof dish.
6Bring a pan of water to the boil and cook the peas for 3-5 mins until bright green and softened. Mash with the back of a fork.
7Cook the mashed potato according to the packet instructions. Fold through the pea mash, add the zest and season with pepper. Top the fish with the mash and press down lightly with the back of a fork. Bake in the oven for 25-30 mins until bubbling and golden.
