Ingredients
JUST ESSENTIALS by ASDA Garden Peas in Water
350g ASDA Just Essentials Long Grain Rice, Washed/rinsed
170g ASDA Just Essentials Brown Onions, Sliced
14g ASDA Just Essentials Garlic, Minced
440g ASDA Just Essentials Curry Sauce, keeping 2 Tbsp aside for the fish
200g ASDA Just Essentials Carrots, Peeled & thinly sliced
1 stock cube dissolved into 200ml amount of water
260g ASDA Just Essential White Fish Fillets
Method
1Preheat the oven to 180?.
2Next with a large frying pan heat 1 tablespoon of oil and fry off the onions, carrots and garlic, around 5 - 7 minutes or until translucent and soft. Set aside.
3Having already prewashed your rice and spread it out in a large oven proof casserole dish and pour over the ASDA Just Essentials Curry Sauce along with 200ml of vegetable stock and the sautéed onions, carrots and garlic. (it should be around a fingertips depth covering the rice) season well with salt and pepper and mix well.
4Cover tightly with foil and bake in the oven for 25 - 30 minutes.
5Coat the fish fillets in the final remaining 2 tablespoons of ASDA Just essentials curry sauce, season well.
6Return the pan to the heat, add the remaining oil and fry the fish fillets off, around 5 - 7 minutes on a high heat turning only once. (you are wanting a little bit of charring).
7once the rice has fully cooked, fluff with a fork and flake the fish over the top, and serve.
