Ingredients

110g vegan butter, softened

150g caster sugar

150g peanut butter (smooth or crunchy)

180g plain flour

1tsp bicarbonate of soda

2tbsp dairy-free milk

160g salted peanuts, crushed

Preheat the oven to 200°C/180°C fan/gas 6. Line 2 flat baking trays with baking paper.

In a mixing bowl add the butter, sugar and 50g of the peanut butter and beat until smooth and creamy using either a hand-held electric mixer, a freestanding mixer or a wooden spoon.

Sift in the flour and bicarbonate of soda. Mix until it resembles breadcrumbs. Add the milk and 100g of the peanuts and mix to a thick dough.

Roll the dough into 45g balls and place 3cm apart on the lined baking trays. Lightly flatten the cookie dough with the palm of your hand, creating a dip in the middle of each one to fill with 1tsp peanut butter per cookie. Sprinkle the remaining 60g peanuts on top.

Bake in the middle of the oven for 10–12 mins or until golden brown and the cookie edges are firm. Once baked, remove from the oven and allow to cool on the trays for 5–8 mins then serve.
