Ingredients
8 Cumberland Sausages, cut into roundels around 2-3 cm thick
1 Onion, finely diced
2 Garlic cloves, finely chopped
2 Red peppers, roughly diced
500g Frozen broccoli, cauliflower & carrot
1 tin Chopped tomatoes
2 tsp Cooking oil
1 Vegetable stock cube, dissolved in 200ml of boiling water
4 Giant Yorkshire puddings
500g Frozen mashed potato
Method
1Begin by heating the oil in a large and deep saucepan or casserole dish, fry off the onions and garlic in 2 tablespoons of cooking oil for 3 minutes on a high heat until fragrant and translucent. Next add the sausage roundels and cook for a further 5 -7 minutes ensuring an even browning on the sausages.
2Next add the diced peppers to the pan and cook for a further 3 minutes until just tender. Now add the frozen mixed vegetables, vegetable stock & tin of chopped tomatoes and cook covered for around 30 minutes or until the sausages are fully cooked and the vegetables are tender.
3Whilst the casserole is cooking, make the mashed potatoes as per pack instruction. For a creamier mashed potato add a tablespoon of butter and small slash of milk.
4Heat the giant Yorkshire as per pack instructions.
5Once fully cooked, serve the sausage and mixed vegetable casserole inside the giant Yorkshire pudding and a dollop of creamy mashed potatoes.
