Ingredients

1 Cucumber

200g tub Asda Red Pepper Houmous

6 Cherry Tomatoes, quartered

1 tsp Fresh Thyme Leaves (optional)

Method

Cut the cucumber in half lengthways; use a teaspoon to scrape out the seeds.

Cut the cucumber into 16 sections and fill the central cavity with the red pepper houmous.

In a small bowl, mix the chopped cherry tomatoes with a pinch of salt and pepper, along with the thyme if using.

Put the cucumber boats onto a serving plate and top with the seasoned cherry tomatoes. Serve straight away.

Cook’s tip: To get ahead prep the cucumber halves the night before – just cover and store in the fridge.
