Ingredients
1tbsp flaked almonds
200g frozen peas
10g mint
10g basil
10g dill
½ red chilli, deseeded and finely chopped
½ clove garlic, finely crushed
1tbsp olive oil
Zest and juice 1 lemon
50g feta
Method
1Preheat the oven to 180C/160C Fan/Gas 4.
2On a baking tray, toast the flaked almonds for 5 mins until golden.
3Put the peas in a sieve over the sink and pour boiling water over them to thaw. Rinse under cold water.
4Roughly chop the mint, basil and dill and put in a food processor with the peas, chilli, garlic, olive oil, and lemon zest and juice. Pulse until the peas start to break down. Alternatively, crush in a bowl with a potato masher. Season with freshly ground black pepper.
5Put the crushed peas in a bowl and crumble over the feta and the toasted almonds before serving.
