Ingredients
For the marinated chicken
1 x 1.1kg pack Asda Succulent Chicken Leg Quarters
120g low fat natural yoghurt
120g single cream
1tsp paprika
1tsp ground black pepper
1tsp oregano
½ bunch coriander (or parsley), chopped
1tbsp tomato paste
3tbsp olive oil
2tbsp garlic paste
2tbsp lemon juice
For the vegetables
500g baby potatoes, larger ones halved
300g Asda Frozen for Freshness Broccoli, Cauliflower & Carrot
3tbsp olive oil
1tbsp garlic paste
1tsp paprika
1tsp ground black pepper
1tbsp lemon juice
Method
1Use a sharp knife to cut a few shallow cuts across each piece of chicken. Mix together the remaining marinade ingredients in a large bowl along with a pinch of salt, then toss in the chicken pieces and mix well.
2Air fry for 30-35 mins at 200ºC, turning the chicken for the last 5 mins of cooking.
3Meanwhile, boil the potatoes in a large pan of salted water for 15 mins. Add in the vegetables and boil for a further 5 mins. Drain and set aside.
4Place the oil in a wok set over a medium-high heat, then add the garlic and fry for 10 secs. Add the drained potatoes, vegetables and spices, along with a pinch of salt, to the wok and stir fry for 7-8 mins on high heat until the vegetables are a bit charred. Add the lemon juice at the end and turn the heat off.
5Serve the chicken alongside the vegetables, spooning over some mint yoghurt chutney and extra coriander, if you like, to finish.
