Ingredients
10 fresh mint leaves, plus extra to serve
30ml sugar syrup
Splash soda water
1 lime
50ml white rum such as Bacardi
Ice
Method
1Put the mint leaves in a highball glass and crush lightly with the end of a rolling pin. Add the sugar syrup and a splash of soda and stir well to mix.
2Squeeze the lime directly into the glass, add the rum and stir well. Fill the glass with ice, garnish with extra mint and serve.
3TIP: To make your own sugar syrup, put 50g caster sugar and 50ml water in a small saucepan and bring to the boil. Reduce heat and simmer for 2 minutes. Remove from the heat and leave to cool.
