Ingredients
500g Asda Flavourful Lean Beef Mince Steak (less than 5% fat)
50g Asda Plain Breadcrumbs
2 cloves of garlic, crushed
2tsp mixed dried herbs
1 egg
2tbsp olive oil
1 onion, finely chopped
1 x 400g tin Just Essentials by Asda Chopped Tomatoes in Tomato Juice
125ml stock made with ½ a reduced-salt stock cube
4tbsp tomato ketchup
300g spaghetti
25g parmesan or cheddar, grated
2tbsp basil leaves (optional)
Method
1Put the beef, breadcrumbs, half the crushed garlic and half the dried herbs in a large bowl. Crack in the egg and mix with your hands until well combined. Season with black pepper.
2Roll the mixture in your palms to make 20 meatballs roughly the size of golf balls. Chill until required.
3Heat 1tbsp oil in a large frying pan and cook the meatballs for 5–6 mins, over a medium heat, until browned all over. Carefully remove and set aside on a plate.
4Add the onion to the pan with the remaining oil and cook over a low heat for 3–4 mins until softened. Stir in the remaining garlic and cook for a further minute. Add the chopped tomatoes, stock, ketchup and remaining dried herbs. Stir and bring to a gentle simmer. Return the meatballs to the pan and simmer gently while you cook the pasta to pack instructions.
5Cook the pasta in a large pan of boiling water for 9–10 mins until tender. Drain and add to the pan with the meatballs and toss until the spaghetti is coated. Divide between 4 plates and serve with some freshly cracked black pepper, cheese and basil leaves, if using.
