Ingredients

225g Chorizo, skin removed and chopped into cubes

500g Pork Mince/Beef Mince

700g Mixed Peppers, diced

2 cans of Black Beans, drained and rinsed

3 cans of Kidney Beans, drained and rinsed

4 cans of Plum Tomatoes, roughly chopped with scissors

2 Red Onions, diced

6 Cloves of Garlic, crushed/minced

1 Carrots, peeled and diced

Sour Cream, optional dollops to serve

1 tsp Vegetable Oil

100ml Beef Stock

Black Pepper

4 tsp Chilli Powder

2 tsp Cumin

1 tsp dried Oregano/dried Thyme

1 kg Rice

4 large Jacket Potatoes

180 Tortilla Chips

To start, preheat a large non-stick frying pan over a high heat and coat with a tsp of vegetable oil. Add the mince and roughly break apart. Leave to brown for 5 minutes, then add the chorizo to cook for a further 5 minutes, reducing the heat to medium.

Next, add all of the prepped veg: peppers, carrots, onion, plum tomatoes and browned meat into your slow cooker, along with the beef stock, garlic, spices and lots of black pepper. Stir to combine. Cook on high for 3-4 hours and on low for 5-6.

When your timer has half an hour left, add the drained & rinsed beans and stir to combine. Cook for the remaining half an hour.

Divide the batch cook into 3 (each container serving 4). Allow to cool before freezing two out of the three containers. When it’s time to eat, serve with your side of choice and reheat over medium heat for around 5 minutes. To defrost, leave in the fridge overnight.
