    Ingredients

    1 Red cabbage, thinly sliced

    1 White onion, finely diced

    250g Cherry tomatoes, halved

    200g Greek style cheese, crumbled

    ½ Lemon, juiced, other ½ sliced into wedges to serve

    Fresh parsley, roughly torn from stems

    50g Pitted black olives, torn

    1 Cucumber, diced

    1 tbsp Rice wine vinegar

    2 tbsp Olive oil

    Black pepper

    Method

    Start by adding the thinly sliced cabbage into a large mixing bowl along with the olive oil, rice wine vinegar, lemon juice and black pepper.

    Then prepare the rest of the veggies by slicing the cherry tomatoes, onion and cucumber. Add into the bowl with a handful of parsley.

    Toss all the ingredients to combine and top with crumbled feta, black olives, additional parsley and the reserved lemon wedges. Season with black pepper and enjoy!
