Ingredients
1 Onion, finely sliced
3 Garlic cloves, finely chopped
500g Diced chicken breast
1 Pataks tikka cooking sauce
2 Red peppers, finely sliced
2 Green peppers, finely sliced
250g Potatoes, washed and diced into 2-3 cm cubes
1Vegetable stock cube, dissolved in 300ml boiling water
2 tsp Cooking oil
300g Long grain rice
Method
1Begin by heating 2 Tbsp of oil in a large saucepan and fry off the onions and garlic for 2 minutes until fragrant and translucent.
2Next add the diced chicken and cook for a further 2-5 minutes until the meat is evenly sealed, add the roughly chopped peppers and cook off for another 2 minutes.
3Now add the Pataks Tikka cooking sauce, vegetable stock and the diced potatoes, and cook covered for 30-35 minutes or until the potatoes are tender and the chicken is cooked through, ensuring to stir periodically so that the curry doesn’t catch. Remove the lid for the last 10 minutes of cooking.
4Whilst the curry is cooking, cook the rice as per the pack instructions ready for serving.
