Ingredients
275g penne pasta
1 tbsp olive oil
500g chicken thigh fillets, skinless, cut into strips
1 onion, finely sliced
3 mixed peppers, deseeded and sliced
1-2 tsp Schwartz Fajita seasoning
1 tbsp tomato purée
2 x 200g tubs Asda Cool Tomato Salsa
40g Asda 30% Less Fat Grated Mild Cheese
Method
1Bring a large pan of water to the boil and cook the pasta according to the pack instructions until al dente. Drain.
2Heat the oil in large frying pan over medium-high heat. Fry the chicken for 5 mins until golden and cooked through. Transfer to a plate with a slotted spoon.
3Add the onion and peppers to the same pan and fry for about 8 mins until softened. Add the fajita seasoning, fry for 1 min, then return the chicken to the pan with the purée, salsa and 50ml water. Simmer for 2 mins, then stir in the pasta.
4Preheat the grill to medium. Spoon the pasta into a 2-litre ovenproof dish, sprinkle over the cheese and grill until bubbling and golden.
