Ingredients
200g fresh cherries, pitted and halved, plus extra to garnish
50g caster sugar
6 scoops vanilla ice cream
400ml Chosen by you Diet Cola
Canned whipped cream, to serve (optional)
Method
1Simmer the cherries, sugar and 150ml water in a pan for 6 mins. Blitz with a handheld blender, pass through a sieve and set aside to cool.
2Divide the cherry mixture between 2 glasses. Put 3 scoops of ice-cream in each glass and top up with cola. Garnish with extra cherries and whipped cream (if using). Serve immediately.
