    Ingredients

    1 clove of garlic, halved

    300g Emmental cheese, grated

    300g Gruyere cheese, grated

    300ml dry white wine

    1 liqueur glass of Kirsch

    2 tsp cornflour

    Bread, for dipping

    Rub the base and sides of a heavy based pan with the cut halves of garlic, leaving the halves in the pan, when finished rubbing.

    Add the wine and cheeses and bring to a simmer, stirring regularly. Meanwhile, mix the Kirsch with the cornflour to form a paste and add to the simmering cheese. Stir for a couple more minutes and turn off the heat. Season with pepper to taste and serve immediately with chunks of bread and skewers to dip.
