Ingredients
400g Asda Fat Free Greek Style Yogurt
1 Lemon, zested and juiced
2 tbsp Olive Oil
1 tsp Cook by Asda Moroccan Inspired Seasoning, plus a pinch for serving
2 Garlic Cloves, crushed
½ tsp Dried Oregano
2 sprigs Thyme, plus extra to serve
400g Mixed Cherry Tomatoes on the vine
1 tsp Small Mint Leaves
Method
1Mix together the yogurt, 1 tbsp lemon juice and ½ lemon zest in a small bowl. Cover and chill until needed.
2Mix together the olive oil, 1 tsp Moroccan seasoning, garlic, oregano and thyme sprigs in a large bowl. Add the tomatoes, season and coat well.
3Heat the oven grill setting to high. Put the tomatoes on a baking sheet, drizzle over any excess oil from the bowl and grill for 6–8 mins until just beginning to blister, shaking the tray from time to time to stop the garlic burning.
4Spoon the yogurt onto a serving plate. Make a slight hollow at the centre for the tomatoes to sit in. Remove stalks from the tomatoes, squashing any unburst ones with the back of a spoon.
5Spoon the tomatoes into the middle of the yogurt and drizzle over juices from the baking sheet. Allow to sit for 1 min so the heat from the tomatoes melts the yogurt slightly. Sprinkle over the extra thyme leaves and lemon zest, a pinch of Moroccan seasoning, mint and some freshly cracked black pepper.
