Ingredients
75g unsalted butter, chilled
150g plain flour
40g light brown soft sugar
1tsp ground ginger
1tsp ground cinnamon
1 egg, beaten
150g royal icing
Juice ½ lemon
Dr. Oetker Extra Strong Food Colour Gel in Red
You will also need 10 x 15cm lengths of ribbon of your choice
Method
1Preheat the oven to 180C/160C Fan/gas 4. Line a baking tray with baking paper.
2In a large bowl, use an electric whisk to mix together the butter and flour until it resembles fine breadcrumbs. Stir through the sugar, ginger and cinnamon, then drizzle in 2tbsp of the egg. Whisk the mixture in short bursts until it comes together to form a soft dough, adding more egg if necessary. Turn out onto a clean work surface and knead gently until you have a smooth ball.
3Lightly flour the work surface and roll out the dough to 5mm thick. Cut into 10 rectangles, each 7cm x 5cm. Cut 2 x diagonal slices from the top end of each to create a gift tag shape, then place on the lined baking tray. Pierce a small hole in the top of each gift tag using a chopstick or skewer and bake on the top shelf of the oven for 20-25 mins until crisp and light golden. Remove from the oven and leave on the tray to cool fully.
4Mix the icing sugar with the lemon juice to create a smooth, glossy, slightly thick paste – you may not need all of the juice. Place 1tbsp of the icing into a bowl and mix in drops of food colour gel until it is a uniform shade of festive red.
5Spoon the remaining white icing into a piping bag fitted with a 2mm plain nozzle and ice around the edge of the biscuit and around the hole. Pipe on a few more small decorative designs, if you like.
6Spoon the red icing into a piping bag fitted with a 2mm plain nozzle and use to write festive messages on your gift tags. Leave to set fully.
7Tie a length of ribbon through the hole and store in an airtight container for up to one week.
