Ingredients
2 Grower’s Selection Bunched Beetroots, washed and stalks removed
200g white chocolate
300ml Asda Fresh Whipping Cream
1tsp vanilla extract
White chocolate curls
Method
1Preheat the oven to 200C/180C Fan/Gas 6.
2Wrap the beetroots in foil and roast for 45-55 mins until tender.
3Unwrap, allow to cool a little, then peel with your hands. Chop, then blend until smooth. Leave to cool.
4Melt the white chocolate in a glass bowl over, but not touching, a pan of simmering water. Set aside and cool slightly.
5Whisk the cream and vanilla until thickened. Use a metal spoon to fold in the chocolate, followed by the beetroot purée.
6Spoon into 10 glasses, cover with clingfilm and chill in the fridge for 2 hrs.
7Top with the chocolate curls and serve.
