Ingredients
1 tsp Cooking oil
1 Onion, finely diced
2 Garlic cloves, finely chopped
2 Carrots, finely diced
500g Lean Beef Mince
400g Tin Chopped tomatoes
200g Frozen broccoli, cauliflower & carrot
1 Vegetable stock cube, dissolved in 100ml of boiling water
1kg Potatoes, washed, peeled & diced
50g Reduced fat spread
Method
1Bring a large pan of salted water to the boil and in a large frying pan, heat the oil. Sauté the onion, carrot, and garlic on a medium to heat until fragrant and translucent, then add the beef mince. Turn up the heat for 4-5 minutes and fry until the mince is evenly browned.
2Meanwhile, peel, halve and boil the potatoes for 20 minutes or until soft. Drain and allow to steam for 10 minutes. Preheat the oven to gas 4, 180°C, 160°C. Add the tinned tomatoes, stock cube to the mince mixture and season to taste. Bring to the boil and simmer for 15 minutes to reduce. Finally add the frozen mixed vegetables and mix through, allow to cook for a further 10 minutes.
3Once the potatoes have steamed, mash them well with the low fat spread until melted and mixed through, season to taste. Pour the mince mixture into an ovenproof dish and top with the mash. Use a fork to rough up the top to help it colour. Bake in the oven for 20-25 minutes or until piping hot and golden in colour.
