Ingredients

3 carrots diced (from frozen mixed veg)

3 onions diced

250g Mushrooms finely diced

800g frozen beef mince

2 tins chopped tomatoes

2 stock cubes, dissolved in water

2 garlic cloves finely diced

Method

Add the oil to a large sauce pan over a medium heat.

Then add the carrots and onion and cook until soft.

Add the garlic and cook for 2 mins then add the beef in batches and cook until brown.

Next add all other ingredients and season well with salt and pepper.

Bring to a simmer and cook, stirring regularly until it has reduced by at least a 3rd and should be thick and glossy. (approx. 30 mins)
