Ingredients

255g strawberries

150g pack raspberries

1 ripe banana (170g)

2 large eggs

75g blueberries

Method

To make a berry coulis, remove the stalks from half the strawberries and cut the berries in half. Put in a pan with a small handful of the raspberries and add 2tbsp water. Heat over a low heat until the berries are bursting. Simmer gently for 2 mins. Push the coulis through a sieve and set aside.

Peel the banana, put in a bowl and mash with a fork. Add the eggs and whisk together until combined.

Heat a nonstick frying pan over a medium heat. Put dessert spoonfuls of the banana mixture in the pan to make small, round pancakes. Cook in batches for about 45 secs on each side until lightly browned.

Serve 3 pancakes per person, topped with the berry coulis and the remaining berries.
