Ingredients
125g flour
1tsp baking powder
50g golden caster sugar
1 egg, lightly beaten
100ml milk
3 bananas, sliced
2tsp sunflower oil
1/2 tsp icing sugar
1/2 tsp cinnamon
Method
1Sift the flour and baking powder into a bowl and stir in the caster sugar. Make a well in the middle and add the egg.
2Gradually beat in the milk until you have a thick, smooth batter. Dip the bananas in the batter to coat.
3Heat half the oil in a frying pan and fry the fritters in batches, for 2-3 mins on each side, adding more oil if needed. Lay on kitchen paper.
4Transfer to a serving plate and dust with the icing sugar and cinnamon.
