Ingredients
100g canned chickpeas
tablespoon olive oil
1tsp ground cumin
1⁄4 avocado
2tsp lime juice
3 cherry tomatoes, halved
Method
1Preheat your oven to 220C/200C Fan/Gas 7.
2Toss chickpeas, rinsed and drained, in a little oil and ground cumin then roast until crispy.
3Mash avocado with lime juice and put in a griddled pitta with the chickpeas, spinach leaves and cherry tomatoes. Season with ground black pepper.
