Ingredients
250g butter
250g caster sugar
5 eggs
250g self raising flour
2 English Russet apples, all cored, 1 thinly sliced, 1 peeled and diced
Method
1Preheat the oven to 180c
2Grease and line a 22cm square cake tin. Arrange the sliced apples in the bottom of the tin, in 3 lines.
3Beat the butter and sugar until light and fluffy. Add the eggs 1 at a time then fold in the flour and diced apples.
4Bake at 180c for 30 to 40 minutes.
5Serve hot or cold with custard, ice cream or cream.
