Ingredients

For the dynamite sauce

4 tbsp vegan mayonnaise

2 tbsp Heinz Tomato Ketchup 50% Less Sugar & Salt

2 tbsp chili garlic or sriracha sauce

1 tbsp chopped pickled gherkins

1 tsp garlic powder or garlic paste

1 tbsp lemon juice

2 tbsp pickle juice (from the pickled gherkins jar)

For the corn ribs

2 x corn on the cob

2 tbsp olive oil

2 tbsp lemon juice

1 tsp paprika

1 tsp garlic powder

Method

Use a sharp knife to slice each piece of corn into 4 pieces – slicing them lengthwise so they curl up and look like ribs once cooked – so you have 8 pieces in total. Mix together the oil, lemon juice, paprika and garlic powder in a small bowl together with a pinch of salt. Rub this mixture on the corns to coat them well.

Air fry the corn ribs for 20 mins at 200ºC, shaking halfway through.

To make the dynamite sauce, mix together all the ingredients together with a pinch of salt, adding the lemon juice and pickle juice at the end until you reach a runny consistency.

Drizzle the corn ribs with the dynamite sauce once ready to serve.
