    Ingredients

    500g Pork Mince

    500g Beef Mince

    311g Carrots, diced

    162g Onions, diced

    4 x cans Chopped Tomatoes

    6 sprigs of Fresh Thyme

    60g of Tomato Puree

    20g of Garlic, minced

    448g of Mixed Peppers, diced

    2 x 500g Spaghetti

    30g of Fresh Basil, stem finely chopped & leaves roughly torn

    2 x Beef Stock Cubes in 200ml boiled water

    1 tsp Vegetable Oil

    1 tbsp Cornflour (optional)

    Start by adding vegetable oil into a large non-stick pan over a high heat. Allow the pan to pre-heat, then add the pork and beef minced.

    Distribute it across the pan and leave to brown for 4 minutes, then stir and continue to cook for a further 3 minutes.

    Add the browned minced into the slow cooker, along with all of the ingredients except the spaghetti. Reserve some of the basil for garnish. Stir to combine and cook on high for 3 hours or on low for 5 hours.

    If you want a thicker bolognese, optionally mix together one tablespoon of cornflour and one tablespoon of water to form a cornflour slurry. Pour into your slow cooker when there is half an hour remaining to thicken.

    Divide the bolognese into 3 containers (each serving 4). Freeze two and refrigerate one. When it’s time to eat, reheat the bolognese on the hob/in the microwave until piping hot whilst you cook your spaghetti. Serve with a sprinkle of fresh basil and a crack of black pepper.
