From spring rolls to takeaway-style favourites, we have all you need to celebrate the Chinese festival

<p>Welcome, everyone, to the Year of the Ox (it's worth mentioning that in Chinese culture, Oxen are generally seen as symbols of wealth, prosperity, diligence, and perseverance).</p><p>Chinese New Year is by far one of the most colourful events in the global calendar. Lanterns, fireworks, parades and dragons &ndash; this is a celebration like no other, and we want to get involved.</p><p>Since it falls on oh-so-chilly 12th February, we can't think of anything better than staying in the warm with a good Chinese-inspired meal.</p><p>With that, we bring you our all-time favourite Chinese dishes, which can be swiftly whipped up from your own kitchen and enjoyed with friends, family, or in front of the telly. It's as colourful as it is delicious, and ready to eat in around 20 minutes. Think again. They're a speciality of Shanghai and, believe it or not, they're easier to make than they look. The dumplings are made using just plain flour and water and the filling is a mixture of pork mince, rice wine, pepper, sugar, soy sauce, ginger and reduced chicken stock. To make sure they pack a punch, we've marinated our ribs overnight to make sure the sticky, sweet glaze, made up of honey, soy sauce, rice wine, hoisin sauce, sesame oil, ginger, garlic and five spice, really takes hold. The delicious marinade would work just as well with chicken, or try pouring over a grilled aubergine for a veggie treat. We've served ours alongside jasmine rice and steamed pak choi and garnished with shredded spring onion and coriander leaves for a fresh finish.
