The ultimate working from home snack that's packed with a whole load of tasty!

We don't know about you, but snacks are one thing we couldn't live without. Especially now that most of us are still working from home and only a walk away from the fridge. But if there's one type of snack that's up there with the best, it's an energy ball. Energy balls are typically a delicious concoction of dried fruit and nuts. They're then topped with all different kinds of tasty treats. Interested? Then check out self-confessed baking addict and cookbook author <a href="https://mykitchensdrawer.com/" target="_blank">Alix from My Kitchen Drawer</a>'s Nutella Energy Ball recipe. <img alt="screenshot_2021-02-03_at_10.58.09__square" class="ci-image ci-square" src="https://ui3.assets-asda.com/dm/screenshot_2021-02-03_at_10.58?scl=1"><h2>Ingredients</h2>For the energy bites<ul><li>170g pitted dates</li><li>250ml boiled water</li><li>60g blanched hazelnuts</li><li>60g desiccated coconut</li><li>1 tbsp cocoa powder</li><li>3 tbsp Nutella</li><li>2 tbsp maple syrup</li></ul> For the coating<ul><li>50g chopped hazelnuts</li><li>50g desiccated coconut</li></ul> <h2>Method</h2><ol><li>Put the dates into a heatproof bowl and then cover with boiled water for 5 minutes to soften.</li><li>Pour the blanched hazelnuts into a food processor and blitz for a few seconds until you have a mixture of fine and coarse hazelnuts.</li><li>Drain the water from the softened dates, then add them to the hazelnuts in the food processor, followed by desiccated coconut, cocoa powder, Nutella and maple syrup. Then blitz the mixture again until it comes together.</li><li>Using a teaspoon, scoop the mixture into 12 bite-sized balls. (If the mixture feels too wet to handle, pop it in the fridge to firm up for 20 minutes or wet your hands to help prevent the mixture from sticking).</li><li>For the coating, mix the chopped hazelnuts and desiccated coconut in a bowl and roll the bites around the coating mixture.</li><li>Eat immediately or, if you prefer them a little firmer, pop them in the fridge for 20 minutes.</li><li>Store in an air-tight container for up to 1 week, or freeze for up to 3 months</li></ol> Feeling inspired to try this recipe?
