Although it has been used in Indian curries and European soups for centuries, here in the UK many of us are most familiar with it as an unseasoned, steamed additon to a Sunday roast – or entirely disguised with a thick cheese sauce (not that we're knocking it).</p>
<p>Why that should be, we just don't know, as cauliflower is a delicious, versatile vegetable. Why boil it when you can grill, roast or mash it?</p>
<p>How about taking things one step further, and blitzing it in a food processor to create a rice substitute?</p>

<h2>Cheesy fish pie</h2>
